After pressing and racking (clarification of the must before fermentation),the rosé wines are vinified at low temperature.
The reds are produced using a traditional vinification process of crushing, de-stemming, with more or less lengthy vatting, according to the year and the grape variety.
Rosé : Its pastel shade is in itself enough to quench your thirst. A wonderful nose with a discrete hint of almond; embracing, seductive and frank. Great elegance and fruitiness.
Red : A beautiful ruby colour with dominant red fruit aromas. Exquisite, tender, extremely crisp, very easy on the palate, it’s everything you ever expected of a Côtes de Provence wine.
Conseils mets et vins :
Rosé : Marries well with the tenderness of minced meats, the creaminess of fish pie, with perfumed risotto dishes - quite simply wonderful with food and highly adaptable.
Red : Ideal with sophisticated home-made dishes, tian-cooked vegetable mixtures, and braised meats.
